Recipe: Greek Turkey Burgers w/ Tomato Salad

With so many different kinds of burgers out there, there’s bound to be one that will make everyone happy. These Greek Turkey Burgers with Tzatziki Sauce and a Greek Tomato Salad are sure to please! The burger itself uses fresh dill, spinach, onion, feta cheese and garlic to get the Greek flavors rolling. Then, because we’re all about the toppings, we had to add the classics: cool, creamy tzatziki sauce, more feta cheese and a bed of Greek tomato salad to help those that are trying to eat less refined carbs, and more veggies!

Now it’s hard to imagine burgers unless they are grilled outdoors in the beautiful weather, but if that is not an option, take your cast iron skillet out of the pantry, and put it to work!

GREEK TURKEY BURGERS

INGREDIENTS

·       1lb lean ground turkey

·       1 cup baby spinach, chopped

·       1/4 cup minced onion

·       1/4 cup crumbled feta

·       1 Tbsp fresh dill

·       1 tsp died oregano

·       1/4 tsp garlic

·       salt and pepper to taste

TOMATO SALAD

INGREDIENTS

·       1 cup cherry tomatoes, quartered

·       1/4 cup onion

·       2 Tbsp parsley

·       2 tsp red wine vinegar

·       1 tsp EVOO

·       salt and pepper to taste

TZATZIKI SAUCE

INGREDIENTS

·       1 cup plain non-fat greek yogurt (fage is my yogurt of choice)

·       1/2 cup shredded cucumber

·       1 Tbsp lemon juice

·       1 Tbsp chopped fresh dill

·       1/4 tsp garlic

·       salt and pepper to taste

DIRECTIONS

SALAD

1.    Combine all of the salad ingredients in a bowl and stir together until combined. Taste for seasoning, cover and refrigerate until ready to serve.

TZATZIKI SAUCE

1.    Add all of the ingredients into a bowl and stir together until combined (if you want a thicker consistency, ring out the cucumber in a dry towel

BURGERS

1.    Combine the spinach, onion, feta, dill, oregano, garlic salt and pepper

2.    Add in ground turkey and use hands to fold in the ingredients together

3.    Measure out your patties and mold them into a good 1/2 inch thickness

4.    Grill the burgers at 400 degrees on the grill, or medium heat on a skillet for 4-6 minutes per side, or until done.

5.    Serve all 3 recipes together, or pick your combination!
