Protein Bites
I recently shared some protein bites at AFS-PLYMOUTH and had some requests for the recipes, so I thought I’d post them here!
Each recipe calls for some protein powder-I use my plant based/vegan protein powder but I’m sure the bites will be delicious if you use whatever you have on hand! I also use organic/nonGMO products if available. I store in a covered container in the fridge (I think they get too soft and gooey if left at room temperature-it’s your call!).
Chocolate PB Bites-1 cup rolled oats, 1/4 cup chocolate protein powder, 1/2 cup honey, 1/2 cup creamy PB. Mix together, scoop into balls, enjoy!
Lemon Coconut Bites-1/4 cup vanilla protein powder, 1 1/2 cup raw unsalted cashews, 1 cup shredded unsweetened coconut, zest from 2 lemons, 1/4 cup fresh lemon juice, 1/4 cup honey, 2 tablespoons melted coconut oil, 1/4 teaspoon turmeric. Add all ingredients to a food processor and pulse until combined, transfer to a bowl and cover, chill in fridge for at least 1 hour. Roll into balls, roll in shredded coconut or poppy seeds if desired.
Mocha Bites-1 cup pitted dates, 1 cup raw unsalted cashews, 1/2 cup almonds, 1/4 cup ground coffee, 1/4 cup chocolate protein powder, 2 tablespoons coconut oil (I found these bites to be a bit dry-next time I’m going to try 3 TBSP of coconut oil). Blend dates and nuts in food processor then add remaining ingredients. Roll into balls, then roll balls in unsweetened cocoa.
