Recipe: Cauliflower Mashed "Potatoes"

Instead of using mashed potatoes in your next meal, why not try mashed cauliflower? The taste is very similar and the health benefits can’t be disputed! See if you can dupe your family on this twist of a classic side.

CAULIFLOWER MASHED “POTATOES”

INGREDIENTS

·      1 large head of cauliflower

·      1.5 c of milk of your choice: almond, rice, low-fat, skim

·      Dash of salt and pepper

·      Optional: Greek yogurt

DIRECTIONS

  1. Cut cauliflower head into pieces.
  2. Add water to a sauce pan over high heat.
  3. Add veggies to veggie steamer, add to sauce pan. Cover pan.
  4. Let water boil until cauliflower is very tender
  5. Turn off stove, take pan off the heat, set veggie steamer aside.
  6. Drain remaining water out of pan.
  7. Put veggies back into the warm pan and begin to mash.
  8. Mash with utensil or potato masher; then, with mixer for desired texture. If desired, add a splash of your choice of milk for consistency.
  9. Add a dash of salt and pepper for taste. Enjoy!

 

Optional: Top your mashed cauliflower with ( ¼ cup ) Greek yogurt in substitution of sour cream and garlic pepper for taste.
