Squash Soup

Super easy Squash soup which is perfect this time of year.
- 2 lbs of cubed squash. ( I get it already cubed from Costco in the veggie and fruit fridge)
- Toss it with olive oil, salt, pepper and garlic powder and put it in the oven for 35 minutes at 400 degrees.
- Mix two cups of chicken broth (I love the organic better than bouillon chicken stock), and the squash in the blender until smooth.
- Transfer to the stove and add a can of evaporated milk, 1/4 teaspoon of cayenne and 1/2 teaspoon of cinnamon and salt and pepper to taste.
- Mix and enjoy!
- You can switch the stock to veggie stock to make it vegetarian as well!

I saw this and wanted to comment as well. Squash soup this time of year is amazing. I have found that squash and leek combined, the same way as above in a blender, offers a really good flavor as well😊
