Squash Soup

Super easy Squash soup which is perfect this time of year.

  1. 2 lbs of cubed squash. ( I get it already cubed from Costco in the veggie and fruit fridge)
  2. Toss it with olive oil, salt, pepper and garlic powder and put it in the oven for 35 minutes at 400 degrees.
  3. Mix two cups of chicken broth (I love the organic better than bouillon chicken stock), and the squash in the blender until smooth.
  4. Transfer to the stove and add a can of evaporated milk, 1/4 teaspoon of cayenne and 1/2 teaspoon of cinnamon and salt and pepper to taste.
  5. Mix and enjoy!
  6. You can switch the stock to veggie stock to make it vegetarian as well!
